Cucumber bruschetta with herbed almond “goat cheese”,

smoky

“bacon” oyster mushrooms & caramelized onions

 

SECOND COURSE

Shaved fennel salad with “frambuesa” tomatoes, refreshing

mint, tarragon and tulsi herbs with a creamy avocado dressing

 

THIRD COURSE

Eggplant Raviolifilled with butterfly pea infused rosemary &

sage cashew cheese’

“chopped toasted pistachio & micro cilantrillo

 

FORTH COURSE

Grilled local Lions Mane mushroom with roasted garlic,

oregano brujo, rosemary and amaranth compound butter over

“aji picante” corn bread

 

FIFTH COURSE

Truffle macadamia Brie topped with ketambilla compote,

maple pecan & fresh tulsi leaves

 

SIXTH COURSE

Chocolate “Pitanga” cherry tart with almond crust
