In this series of blog posts, we want to highlight a few amazing vegan chefs from the island nation, also known as La Isla del Encanto or “the Island of Enchantment.” We’ll be chatting with them about how they turn traditional Puerto Rican cuisine into delicious vegan dishes.

Norelis George of Buena Onda Vegan Eats
Norelis George is the owner of Buena Onda Vegan Eats, a great Puerto Rican vegan business that offers plant-based foods, smoothies, and fresh juices, including detox packages and tons of healthy vegan dishes options like guacamole, quinoa ceviche, and more! They’ve given us their recipe for their delicious vegan “tuna” salad below. It’s made with chickpeas!
VEGAN “TUNA” SALAD
Vegan Wines suggests pairing this chickpea salad with our 2017 Serracavallo Sette Chiese! This is a simple recipe that pairs well with the refreshing taste of this vegan red wine!
Ingredients:
- 1 can of chickpeas
- 1/2 onion
- 1 stalk of celery
- 1 can of corn
- 1/2 green bell pepper
- 1 sheet of nori (sushi paper)
- 1 tbsp Vegan mayo
- salt and pepper
Process:
Smash the chickpeas.
Chop the onion, celery, bell pepper, and nori sheet (small dice).
Combine all ingredients with vegan mayo according to your preference.
Serve with chips, pita, crackers, toasted bread, or tortilla wraps!
