In this post, I’ve detailed five of my favorite easy, vegan recipes. And well, because a lot of us need it right now, I’ve also provided vegan wine pairings for each! These are a few easy, vegan recipes (and wine pairings) to help you out during these trying times! Hopefully, you have a lot of these ingredients and pantry staples on hand already.
This recipe for vegan tuna salad only contains five ingredients – tofu, vegan mayo, celery, scallions, and nutritional yeast. Fancy enough for brunch, it’s also simple enough to make for yourself (and the kids if they’re home with you!) at lunchtime or for a quick dinner. Enjoy it with a glass of Chianti! Hey, when you can’t go to Italy, you can pretend, right?

Another delicious meat alternative, this “chorizo” is made with all real ingredients and packed with spices. Browning the ingredients gives the dish a deep flavor. Make a big batch and you can use it in all sorts of meals, from tacos to breakfasts to rice and potato-based dishes. Serve it with a glass of chilled white wine!

Of course, I love a good recipe from our friends at Miyoko’s! And this particular cauliflower recipe involves red wine! It’s super quick and simple, and you hardly have to measure your ingredients, which also include olives, capers, pine nuts, and salt. The cauliflower becomes very tender, and it’s amazing with a glass of Semillon!

Here’s a twist on a classic salad with plenty of interchangeable ingredients, including fruits, nuts, and vegetables, to keep you healthy while you’re quarantined! You probably already have a few cans of chickpeas in your pantry anyway. Now pair it with a nice glass of rosé for spring!

Bittersweet Cashew Cream Truffle Squares
Did you think I’d forget dessert? If there was ever a time you were entitled to dessert, that time is now! These truffle squares require only four ingredients – thick cashew cream (which you can make), dark chocolate, vanilla extract, and either melted chocolate or cocoa powder. Get comfortable and enjoy your chocolate with a bold red. You deserve it.
